Banana Cream Pie

2/3 cup sugar

6 tablespoons flour

2 1/2 cups milk

3 eggs, separated

pinch of salt

1 teaspoon vanilla

3 bananas

1 baked pie shell

Methods/steps

1. Mix flour and sugar, add milk and cook until thick.

2. Beat egg yolks slightly, add a little cooked mixture to the egg yolks, pour all together and cook a few minutes more.

3. Remove from heat and add salt and vanilla.

4. CHILL THOROUGHLY.

5. Slice the bananas and add to the pudding.

6. Put in baked pie shell.

7. Beat egg whites, add 3 tablespoons sugar gradually.

8. Beat until stiff and put on pie.

9. Brown in 350 degree oven or broiler.  (I use the broiler, it doesn't take long.)

Additional Tips
For Cocout Cream Pie - omit the bananas and add 1 cup coconut.  Very good also!
