Teriyaki Chicken

Description A healthy yet delicious and easy chicken recipe that is also easy to half or double! The sauce also makes a great stir-fry sauce!

About 4 servings

1 lb Boneless, Skinless Chicken Breast or Tenders 


Makes 1 1/2 cups. I usually make the following recipe, use half and refrigerate the remaining sauce for later in the week.  

1/2 cup Soy Sauce

1/2 cup Dry Sherry

1/4 Maple Syrup

3 tbsp Red Wine Vinegar

4 Garlic Cloves, crushed

1 tsp Ginger (pickled or ground)

1/4 tsp Hot-Pepper Sauce (optional) 


There are two easy ways to make this recipe:

In the oven:

Combine sauce ingredients until smooth. (It will be thin.)Place chicken in a small casserole type dish, it's ok if chicken overlaps a little.  Pour enough sauce over the chicken to mostly cover it. Cover with foil and refrigerate, preferably at least two hours. 

When ready to bake, preheat oven to 450F degrees. Bake until the chicken is cooked through, about 20 minutes. Turn the chicken in the sauce. Lower temperature to 350F degrees. Bake for another 25 minutes. 


On the grill:

Line a small bowl with foil. Place a single piece of chicken in the foil. Pour enough sauce to cover most of the chicken. Carefully, loosely wrap the foil up around the chicken, making a 'pocket', leaving room for air. Fold and pinch the top and side to ensure no leakage. Repeat with remaining chicken. Place all pieces in bowl to refrigerate, preferably at least two hours. 

When ready to grill, preheat grill. Reduce heat to low-medium. Taking care not to rip the foil, place each chicken 'pocket' on lower shelf of grill. Cook for about 15 minutes. Carefully unwrap a pocket  and check chicken for done-ness. When cooked thoroughly, lower heat and move chicken to top shelf of grill for another 5-10 minutes. 

Serve with veggies (see recipe: Ginger Sesame Asparagus), and brown rice for a healthy dinner!

Additional Tips
Though this recipe can be made last minute, it's really yummiest when the chicken can marinate with the sauce in the fridge for a few hours!
