Biscotti - Almond, white chocolate & Apricot

  • 2 3/4 cups flour
  • 1 1/2 cups sugar
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 5 tablespoons apricot brandy or almond specialty syrup
  • 3 ounces white chocolate, chopped
  • 1/2 cup unsalted butter
  • 1 2/3 cups almonds, toasted
  • 6 ounces dried apricots, chopped
  • 2 teaspoons almond extract
  • 2 eggs 
Methods/steps
  1. 1. Toast almonds about 8 minutes at 375 degrees.
  2. 2. Cool and chop coarsely.
  3. 3. Chop apricots.
  4. 4. Chop chocolate.
  5. 5. Combine dry ingredients, add butter and mix.
  6. 6. Add almond, chocolate and apricots.
  7. 7. Stir in brandy, extract and eggs.
  8. 8. Dough will be very stiff.
  9. 9. Form 3 logs on a greased cookie sheet. Logs 3\\\" X 12\\\" X 1\\\".
  10. 10. Refidgerate 30 minutes.
  11. 11. Bake 350 degrees till golden, approximately 30-35 minutes.
  12. 12. Cool on rack completely.
  13. 13. Cut in slices approximately 1/2\\\" to 3/4\\\" thick.
  14. 14. Lay cut side down and bake 6 minutes.
  15. 15. Turn over and bake another 6 minutes.
  16. 16. Cool.
  17. 17. Store in airtight container. 
Additional Tips
Don't let the long instructions scare you out from trying these.  They are delicious.
