Macadamia Toffee Chip Cookies

1 1/2 cups unsalted butter, room tempurature

1 cup sugar

2/3 cup brown sugar

2 eggs

1 teaspoon vanilla

2 cups all-purpose flour

2 cups cake flour (not self rising)

2 teaspoons baking soda

1 teaspoon salt

3 cups toffee chips (or a 12 ounce bag of English toffee bits)

2 1/2 cups coarsely chopped macadamia nuts (11 ounces)

 

 

Methods/steps

1. Preheat oven to 350 degrees.

2. In the bowl, combine butter and sugars.  Beat on medium until light and fluffy, about 2 minutes.

3. Add eggs and vanilla and beat.

4. Add dry ingredients.

5. Add nuts and chips.

6. Drop dough and flatten slightly with palm of hand.

7. Bake until golden and just set, about 15 minutes.

8. Cool 5 minutes.

9. Transfer cookies to rack to cool.

10. Store in an airtight container up tp 1 week. 

 

Additional Tips

I also like to use English toffee bits, then they are a little more chewy.

Once I made them only with English toffee bits and just used a 12 ounce bag of bits.

A very tasty cookie, but a little spendy to make......
