Lemon Meringue Pie

  • 1 1/4 cups sugar
  • 1/4 cup cornstarch
  • 3 egg yolks
  • 1/8 teaspoon salt
  • 1 3/4 cups hot water
  • 1 tablespoon butter
  • 1/3 cup lemon juice( 2 lemons)(or 1/2 cup realemon, if you like it really lemony)
  • 3 egg whites for meringue
  • 3 tablespoons sugar
  • 1 9\\\" baked pie shell 
Methods/steps
  1. Prepare and bake a 9\\\" pie shell.  Cool.
  2. Beat egg yolks, add sugar, cornstarch, salt and hot water.
  3. Cook until clear, about 3 minutes. 
  4. Remove from heat and add lemon juice and butter.
  5. Mix well.
  6. Cool slightly and put in pie shelll. 
  7. Cool.
  8. Cover with meringue.
  9. Meringue:  Beat egg whites and add 3 tablespoons sugar gradually.
  10. Beat until stiff and put on pie.
  11. Broil until brown.  Chill in refridgerator.
Additional Tips
Recipe calls for 1/3 cup lemon juice, but we like it really lemony, so we use 1/2 cup realemon instead.
