Salsa-Glazed Baked Salmon

We've all heard we need to eat more fish.  Salmon can be hard to make at home.  Try this tasty recipe for one good idea on how to make salmon.

- 2 6 oz portions salmon fillet

- 1 cup cooked brown rice, according to package directions

- 1 cup canned black beans, drained & rinsed

- 2 cups cooked from frozen broccoli

- juice of one lemon

- 1 tsp cumin

- 1/2 tsp chili powder

- 1/2 tsp oregano- salt & pepper, cayenne pepper if desired

- 3 Tbsp prepared salsa

- 3 Tbsp fat free mayonnaise

Methods/steps

- Preheat oven to 400 degrees.

- Place salmon on baking sheet w/ tinfoil and sprayed w/ nonstick spray.

- Combine salsa & mayo in small bowl and mix to combine. Spread over the top of each fillet.

- Bake in oven for approx 10-15 min. or until flesh flakes easily and is firm to the touch.

- While that is baking, place rice, black beans, cumin, oregano and chile powder in microwavable w/ a little water. Microwave for 2 min. Take out and stir. Put back in microwave for one more minute.  Season w/ salt, pepper & cayenne if desired.

- Reheat broccoli in microwave w/ a little water. Take out, drain water, squeeze lemon juice over broccoli and season w/ salt & pepper.

- Plate salmon on two plates. Split broccoli and black beans in rice in two equal portions on each plate.
