Pumpkin Pie

  • 2 eggs, slightly beaten
  • 1 15 ounce can pumpkin
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1 1/2 cups (12 ounce can) evaporated milk
  • 1 9-inch unbaked pie crust      
Methods/steps
  1. Combine filling ingredients in order given; pour into unbaked pie crust.
  2. Bake 15 minutes at 425 degrees.
  3. Reduce oven temperature to 350 degrees and bake an additional 40-50 minutes or until knife inserted near center comes out clean.
  4. Cool.
  5. Serve with whipped cream.
Additional Tips
If you are cooking a pumpkin, you will need 1 3/4 cups of pumpkin. I have also been out of evaporated milk, then the substitute is, use brown sugar instead of white sugar and 1 cup of 2% milk, instead of 1 1/2 cups evaporated milk. The rest of the ingredients are the same.
