  • For the cake:
  • 3 eggs
  • 1 cup sugar
  • 2/3 cup pumpkin
  • 1 teaspoon lemon juice
  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup finely chopped nuts
  • powdered sugar
  • For the filling:
  • 1 cup powdered sugar
  • 2 (3 ounce) packages cream cheese
  • 4 tablespoons butter
  • 1/2 teaspoon vanilla
Methods/steps
  1. Preheat oven to 375 degrees.
  2. Beat eggs on high speed of mixer for 5 minutes.
  3. Gradually beat in sugar.
  4. Stir in pumpkin and lemon juice.
  5. Stir together flour, baking powder, cinnamon, ginger, nutmeg amd salt.
  6. Fold into pumpkin mix.
  7. Grease a 10 X 15 inch jelly roll pan, put waxed paper or parchment paper on the bottom of the pan and grease that also.
  8. Spread the batter onto the paper. It will be quite thick.
  9. Top with nuts.
  10. Bake for 15 minutes.
  11. Turn out on towel that is sprinkled with powdered sugar.
  12. Roll cake amd towel together and cool.
  13. Unroll to fill, when cooled.
  14. Filling: Combine powdered sugar, cream cheese, butter and vanilla.
  15. Beat until smooth.
  16. Spread over cake.
  17. Roll up cake and filling together.
  18. Chill. Refridgerate.
