  • 1 cup butter, softened
  • 2 packages (3 ounces each) cream cheese, softened
  • 2 cups flour
  • 3 eggs
  • 1 cup sugar
  • 1 can (8 ounces) almond paste, cut into cubes
  • sliced almonds
Methods/steps
  1. In a mixing bowl, cream butter and cream cheese. Gradually add the flour.
  2. Cover and refridgerate for 1 hour or until easy to handle.
  3. Roll into 1 inch balls.
  4. Press dough onto the bottom and up the sides of ungreased miniature muffin cups; set aside.
  5. For filling, beat eggs in a mixing bowl until light and fluffy.
  6. Add sugar; mix well.
  7. Beat in almond paste.
  8. Spoon a rounded teaspoonful into each cup; top with three almond slices.
  9. Bake at 325 degrees for 25-30 minutes or until lightly browned and filling is set.
  10. Cool for 10 minutes before removing to wire rack.
