Orange Chicken Stir Fry

  • 9 tablespoons olive oil, divided
  • 1 pound chicken
  • 6 garlic cloves, minced
  • 6 green onions, chopped
  • 1 cup and 2 tablespoons water
  • 3 tablespoons lemon juice
  • 3 tablespoons orange juice
  • 4 1/2 tablespoons vinegar
  • 6 tablespoons soy sauce
  • 3/4 cups packed brown sugar
  • 1 1/2 teaspoons red pepper flakes, or adjusted to taste
  • 6 teaspoons cornstarch
  • 3 tablespoons water
  • hot cooked rice
Methods/steps
  1. Cut chicken into bite sized pieces and sautee in 6 tablespoons oil until browned.
  2. Meanwhile, in a small sauce pan, sautee garlic and green onions in remaining 3 tablespoons oil until garlic is golden.
  3. Add water, orange juice, lemon juice,vinegar, soy sauce, brown sugar and pepper flakes. Bring to a boil. Reduce heat to medium.
  4. In a small cup or dish, mix together cornstarch and water until thoroughly blended. Pour cornstarch mixture into sauce, stirring constantly. Cook, stirring, over medium heat until sauce thickens to your liking. Remove from heat and combine with chicken until completely coated. Serve over rice.
Additional Tips
Use more or less cornstarch mixture depending on how thick you like your sauce. You can add ginger if you like the flavor. Or orange peel or orange juice concentrate for more orange flavor. Enjoy!
