Pineapple Pie

  • 1 tablespoon cornstarch
  • 3 egg yolks
  • 3/4 cup sugar
  • 1/4 cup butter
  • 1 cup crushed pineapple
  • juice of 1/4 lemon or 1/2 tablespoon reallemon
  • 1 cup boiling water
  • 1 9 inch baked pie shell
  • 3 egg whites for meringue
Methods/steps
  1. Bake pie shell.
  2. Mix rest of ingredients and cook until thick.
  3. Put in baked and cooled pie shell.
  4. Cool.
  5. Cover with meringue. Beat egg whites and slowly add 3 tablespoons sugar. Beat until holds peaks. Put on top of cooled pineapple and broil until brown.
