Lemon Pudding Roll

  • 3 eggs
  • 1 cup sugar
  • 1/4 cup cold water
  • 1 teaspoon vanilla
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 package lemon \"cook\" pudding
  1. Beat eggs with electric mixer in large bowl on high speed until thick and light colored (about 5 minutes).
  2. Gradually add sugar. Continue to beat until light and fluffy.
  3. Add water and vanilla. Mix well.
  4. Add dry ingredients, low speed.
  5. Pour into greased and waxed-paper lined 10X15 inch jelly roll pan.
  6. Bake at 375 degrees for 12-15 minutes.
  7. Loosen edges and turn out of pan immediately onto a tea towel sprinkled with powdered sugar.
  8. Remove the waxed paper.
  9. Roll, starting with the long edge. Place on tray and put in refridgerator to cool.
  10. Prepare lemon pudding as package directs(may use 1 egg instead of two yolks, if desired).
  11. Cool thoroughly.
  12. When cake and pudding are both cooled, unroll cake. Spread lemon filling evenly over cake.
  13. Roll up carefully.
  14. Chill until ready to serve.
