Fruit Soup

Ice Cream / Sorbet / Sherbet
  • 3 tablespoons cooking tapioca
  • 1/2 cup sugar
  • dash of salt
  • 2 1/2 cups fruit juice and water
  • 1 6 ounce can frozen orange juice
  • 1 box frozen strawberries
  • 1 can mandarin oranges, drained
  • 1 pint peaches, sliced and drained
  • 2 bananas may be add just before serving
  • sherbert of your choice (lime, lemon, orange, rainbow, etc.)
  1. Drain the fruit.
  2. Add water to make 2 1/2 cups.
  3. Take 1 of the 2 1/2 cups of liquid and add to tapioca, sugar and salt.
  4. Cook until thick and clear and until tapioca is done.
  5. Then add the rest of the liquid.
  6. To this, add the rest of the ingredients.
  7. Serve in sherberts with a dip of sherbert.
Additional Tips
The original recipe called for lime sherbert, but orange was usually the favorite at our house, so it is whatever you would like.
