Middle Eastern Bean Spread (Hummus)

12 servings - 2 tablespoons each
  • 16 ounce can garbanzo beans (chickpeas)
  • 3 cloves garlic, crushed
  • 3 tablespoons lemon juice
  • 2 teaspoons olive oil
  • 1/2 teaspoon cumin
  • 1 tablespoon chopped parsley
  • 1 pound assorted raw vegatables, such as broccoli florets, carrot, and celery sticks, green pepper slices
Methods/steps
  1. Drain beans, reserving 1/4 cup of the liquid.
  2. Place beans, reserved liquid and remaining ingredients (except parsley and raw vegetables) into a blender or food processor.
  3. Blend until smooth.
  4. Place in a serving dish and garnish with parsley; chill.
  5. Arrange raw vegetables on a platter; offer hummus as a dip.
  6. Spread hummus on bagels, pita bread or sandwiches if desired.
