Honey-Lemon Chicken

Yummy, easy chicken recipe.

  • 4 frozen boneless, skinless chicken breats
  • 1/3 cup lemon juice
  • 1/4 cup olive oil
  • 1 TBSP Dijon mustard
  • 1 TBSP honey
  • 2 large garlic coves, finely chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper
  1. Rinse frozen chicken breast off under lukewarm water until ice glaze melts, about 1 minute. Place in shallow baking dish in a single layer. Set aside.
  2. Combine remaining ingredients. Set aside 1/4 cup of sauce. Pour remaining sauce over chicken and refrigerate for at least 20 minutes.
  3. Preheat broiler. Place chicken on broiler pan. Baste with some of the reserved marinade. Broil, 4 inches from top, for 5 minutes.
  4. Baste chicken. Broil 3 minutes, or until golden.
  5. Turn chicken, baste. Broil 6-8 minutes, or until juices run clear when thickest part of chicken is pierced, or 170 degrees F.
Additional Tips

Broiling times may vary due to varying thickness of chicken breasts. Non-frozen chicken may be used, adjust broiling times accordingly, and watch it VERY CAREFULLY when broiling. This recipe can also be made on the grill, adjust times accordingly. Serve with your favorite steamed veggie and side of pasta or rice for an easy and delicious meal!
