Delicious Butternut Squash Ravioli

Description This recipe is amazingly delicious!
At a glance
  • 1 (18 oz) package Butternut Squash Ravioli
  • 2 C dried cranberries
  • 3/4 C apple cider vinegar
  • 1/4 C water
  • 1/2 C canola oil
  • 1 medium red onion, thinly sliced
  • 1 lb baby spinach, rinsed
  • 1 (16 oz) goat cheese log
  • 2 C toasted, chopped walnuts
  • salt and pepper to taste
  1. Cook ravioli as directed on package. Rinse and set aside when done.
  2. While cooking ravioli, mix and heat cranberries, vinegar, and water into saucepan. Bring to boil.
  3. Remove from heat. In a large bowl pour in oil, add in onions, mix well.
  4. Toss baby spinach and ravioli until coated with dressing.
  5. Sprinkle with cheese.
  6. Serve warm.
  7. Yummy!!
Additional Tips
This is a very rich recipe. If it's too strong for you, use less onions and cheese.
