Sugar Free Raisin Cream Pie

  • 2 small vanilla pudding boxes, sugar free, cook and serve
  • 2 1/2 cups skim milk
  • 1/2 cup fat free sour cream
  • 1/2 tsp cinnamon
  • 1 cup of raisins, plumped
  • 1 purchased graham cracker crumb crust
  • 1 container cool whip
  1. Plump raisins by covering them in water. Bring them to a boil. Remove from heat. Cover and set for ten minutes. Drain.
  2. Mix pudding and milk and cook until the mixture is thick. (On the stove or in the microwave) Remove from heat. Add the plumped raisins. Mix and let cool slightly. Add the sour cream and cinnamon. Mix and pour into prepared crust. Refrigerate. Top with cool whip sprinkled with cinnamon before serving.
