Asparagus Spears Salad

  • 20 fresh asparagus spears, tough ends snapped off :)
  • 1/2 cup (4 oz) Italian dressing
  • lettuce
  • 4 strips pimento (opt)
  • 4 lemon wedges (opt)
Methods/steps
  1. Cook or steam asparagus until crisp-tender, about 7 minutes. Plunge into ice cold water to stop cooking. Drain, pat dry, and coat with dressing. Marinate 1 hour.
  2. Serve five spears on a bed of lettuce (or on a lettuce leaf). Garnish with lemon/pimento if desired.
