Cajun Jambalaya

A lot of the recipes I'm adding today...which remain to be approved by the Chef Recipe Editor. :) ... are recipes I use when I am trying to cut the white stuff out of my life (white sugar and white flour). Most of the recipes are hearty, homemade, and taste pretty good.

  • 1 lb kielbasa or other spicy smoked sausage
  • 1 tomato, chopped
  • 1 1/2 cups chopped green bell pepper
  • 1 1/2 cups chopped onion
  • 1 1/2 cups chopped celery
  • 2 cloves garlic, minced
  • 5 1/2 cups water
  • 1 lb lentils (2 2/3 cups), checked over
  • 1 cup uncooked brown rice
  • 1 15 oz can tomato sauce
  • 3/4 tsp Celtic sea salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  1. Slice sausage 1/4" thick; place in a 4 quart round covered casserole with bell pepper, tomato, onion, celery, garlic.
  2. Cover with lid and cook in a 350 degree oven for 30-60 minutes or until veggies are tender. Stir midway through cooking. (I always tend to overcook the veggies a little...so I'm not sure how long YOU will want to cook the veggies to start...)
  3. Meanwhile, bring water to boil and check over the lentils.
  4. To cooked sausage and vegetables, add lentils, rice, and boiling water. Recover and cook for 30-60 more minutes, or until rice is tender.
  5. Stir in tomato sauce, Celtic sea salt, black pepper, and cayenne. Re-cover and let stand 5 minutes.
