Festive Pork Prime Rib Roast

  • 1/2 cup dry cooking sherry or chicken broth
  • 1/2 cup soy sauce
  • 2 garlic cloves, minced
  • 2 tablespoons ground mustard
  • 2 teaspoons dried thyme
  • 1 teaspoon ginger
  • 1 boneless pork loin - 4 to 5 pounds
  • Apricot sauce:
  • 1 jar apricot preserves
  • 2 tablespoons dry cooking sherry or chicken broth
  • 1 tablespoon soy sauce
Methods/steps
  1. In a large plastic bag or glass container combine first six ingredients.
  2. Mix well.
  3. Add pork roast - turn to coat all sides.
  4. Cover and refridgerate 3 to 4 hours, turning occasionally.
  5. Drain and discard marinade.
  6. Place roast with fat side up in roaster.
  7. Bake at 325 degrees for 2 to 2 1/2 hours or until meat thermometer reads 160 degrees.
  8. Cover and let stand 15 minutes before carving.
  9. Meanwhile in a small pan, combine sauce ingredients, heat through.
  10. Serve with roast.
Additional Tips
If making a small roast, you may only need to bake it for about 1 1/2 hours. We don't always make the sauce, very good without it also.
