Description A really yummy cold vegetable soup! No cooking required on this one. OK, I have Spring fever!

Main Ingredient
  • 3 stalks celery, chopped
  • 1 medium green pepper, chopped
  • 1 medium cucumber, chopped
  • 1 /2 cup chopped onion
  • 2 garlic cloves, crushed or minced
  • 4 cups canned tomatoes, chopped, with juice
  • 1 8 ounce can tomato sauce
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons vinegar (red wine vinegar is really good)
  • 3 dashes tabasco sauce
  • tomato juice (optional)
  1. Chop veggies. I like to hand chop the veggies, because part of the appeal of this soup is the crunch of the cold veggies in each mouthful of liquid.
  2. A food processor may be used, but, to me the food processor makes the pieces too small.
  3. Combine all the ingredients in a soup tureen or large glass bowl and mix well.
  4. If the soup is thicker than you like, add tomato juice to thin it.
  5. Chill for several hours, until the soup is really cold.
  6. It tastes even better if you chill it over night.
  7. Serves 4 to 6, depending on how hungry you are and what else you are serving.
