Rhubarb Cream Cheese Bars

  • 6 tablespoons unsalted butter, softened
  • 3/4 cup packed light brown sugar
  • 3/4 cup flour
  • 1/2 cup oatmeal
  • 1/4 teaspoon salt
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup sugar
  • 1/3 cup sour cream
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/4 teaspoon ground ginger
  • 2 1/2 cups sliced fresh rhubarb
  1. Heat oven to 350 degrees.
  2. Line a 9 inch square pan with foil; spray with cooking spray.
  3. Beat butter in medium bowl at medium speed 1 minute or until creamy.
  4. Beat in brown sugar 30 to 60 seconds or until well blended.
  5. At low speed, beat in flour, oats and salt 30 to 60 seconds or until crumbly.
  6. Remove 1/2 cup of the oat mixture for topping; press remaining mixture into bottom of pan.
  7. Wipe bowl clean.
  8. Add cream cheese; beat at medium speed 1 minute or until fluffy.
  9. Beat in sugar 1 minute or until creamy.
  10. At low speed, beat in sour cream 15 seconds.
  11. Add eggs one at a time, beating well after each addition.
  12. Beat in vanilla and ginger.
  13. Sprinkle rhubarb over crust; cover with batter.
  14. Bake 20 minutes.
  15. Sprinkle with reserved 1/2 cup oat mixture; bake an additional 25 to 30 minutes or until puffed and lightly browned and knife inserted in center comes out clean.
  16. Cool on wire rack to room temperature.
  17. Cover and refridgerate several hours or overnight.
  18. Remove from pan using foil; cut into bars.
Additional Tips
So good, they could also be a dessert.
