Cherry-Rhubarb Dessert

Description Mom\\\'s recipe.......good............only I cut down the sugar...:)

  • 1 cup quick-cooking oatmeal
  • 1 cup brown sugar
  • pinch of salt
  • 1 cup flour
  • 1 cup butter
  • 1/2 cup nuts to topping
  • 4 cups diced rhubarb
  • 1/2 cup sugar
  • 1 cup water
  • 2 tablespoons cornstarch
  • 1 teaspoon almond flavoring
  • 1 can cherry pie filling
  • red food coloring
  1. Mix the first five ingredients for the crust (oatmeal, brown sugar, salt, flour and butter).
  2. Place a little more than 1/2 of the mixture in the bottom of a 9 X 13 pan.
  3. Add the 1/2 cup nuts to the rest of the mixture and save it for the topping.
  4. Put the 4 cups of rhubarb on the bottom crust.
  5. Cook water, sugar and cornstarch until thick.
  6. Add food coloring, almond and pie mix to the water, sugar, cornstarch mixture.
  7. Pour this on top of the rhubarb.
  8. Sprinkle remaining topping over this.
  9. Bake at 350 degrees for 45 minutes.
