Pickle Relish

  • 1 gallon, ground-up, large cucumbers: don\\\\\\\'t peel, but take out seeds
  • 8 small white onions, grind
  • 3 green peppers, grind
  • 1/2 cup pickling salt
  • crushed ice
  • 5 cups sugar
  • 5 cups vinegar
  • 1 1/2 teaspoons tumeric
  • 1/2 teaspoon ground cloves
  • 2 teaspoons mustard seed
  • 1 teaspoon celery seed
Methods/steps
  1. Mix cucmbers, onions and peppers and put 1/2 cup pickling salt on top. Cover with crushed ice.
  2. Let stand 3 hours.
  3. Drain thoroughly (can put cheese cloth or paper towels in a colendar).
  4. Combine:
  5. 5 cups sugar
  6. 5 cups vinegar
  7. 1 1/2 teaspoons tumeric
  8. 1/2 teaspoon ground cloves
  9. 2 teaspoons mustard seed
  10. 1 teaspoon celery seed
  11. Bring to a boil.
  12. Add vegetables and bring back to a boil.
  13. Put in jars and seal.
