Perfect Potato Pancakes

  • 4 large potatoes (about 3 pounds)
  • 2 eggs, lightly beaten
  • 1/2 cup flour
  • 1/2 cup finely diced onion
  • 1 teaspoon salt
  • 1/8 teapoon pepper
  • maple sryup
  • applesauce
  • bacon
Methods/steps
  1. Shred potatoes. (You may peel them or leave the peels on, your choose): place in a bowl of cold water.
  2. Line a colander with cheese cloth or paper towels. Drain potatoes into cloth and squeeze out as much moisture as possible. (This is done to prevent the potatoes from turning a dark color.
  3. In a large bowl, combine potatoes, eggs, flour, onion, salt and pepper.
  4. On griddle, drop about 1/4 cupful of mixture, about 3 inches apart and press lightly to flatten.
  5. Fry until golden brown, about 4 minutes on each side.
  6. Repeat with remaining batter.
  7. Top with butter and maple sryup.
  8. Serve with a small amount of applesauce and 2 strips of bacon each.
