- 4 large potatoes (about 3 pounds)
- 2 eggs, lightly beaten
- 1/2 cup flour
- 1/2 cup finely diced onion
- 1 teaspoon salt
- 1/8 teapoon pepper
- maple sryup
- applesauce
- bacon
Methods/steps
- Shred potatoes. (You may peel them or leave the peels on, your choose): place in a bowl of cold water.
- Line a colander with cheese cloth or paper towels. Drain potatoes into cloth and squeeze out as much moisture as possible. (This is done to prevent the potatoes from turning a dark color.
- In a large bowl, combine potatoes, eggs, flour, onion, salt and pepper.
- On griddle, drop about 1/4 cupful of mixture, about 3 inches apart and press lightly to flatten.
- Fry until golden brown, about 4 minutes on each side.
- Repeat with remaining batter.
- Top with butter and maple sryup.
- Serve with a small amount of applesauce and 2 strips of bacon each.
