Green Lime Cucumber Pickles

  • 1 gallon water
  • 1 cup pickling lime
  • clear water
  • 1 quart vinegar
  • 5 cups sugar
  • 1 teaspoon celery seed
  • 1 teaspoon whole cloves
  • 1 teaspoon salt
  • 7 pounds prepared cucumbers (about one gallon), peeled, cut into 1/2 X 2 inch sticks
  • green food coloring
  1. Peel and cut large cucumbers into 1/2 X 2 inch sticks.
  2. Thoroughly mix 1 gallon of water and 1 cup pickling lime.
  3. Pour over prepared cucumbers, and let stand overnight.
  4. Next day, thoroughly wash the cucumbers until the water is clear. (I wash them about three times. I pour them in the sink and run cold water over them, then fill the other sink with cold water and transfer them to that sink. When they seem pretty washed, I then run cold water in the other sink and transfer them again. Do this until the water is clear when you are done rinsing them.)
  5. When you are done rinsing them, soak them in clear water for 3 hours.
  6. Drain them good.
  7. Make a syrup of 1 quart vinegar, 5 cups sugar, 1 teapsoon celery seed, 1 teaspoon salt, but DO NOT COOK it. Just mix well and pour it over the prepared cucumbers. Tie the teaspoon of whole cloves in a bag of cheese cloth, or a square of cloth from a clean sheet and put it to soak with the prepared cucumbers and syrup.
  8. Let stand overnight.
  9. Next day, boil 1/2 hour, (with the cloves still in the bag), until cucumbers are clear.
  10. Add green food coloring while it is cooking.
  11. Put into sterilized jars and seal.
