Red Cinnamon Stick Pickles

Description Another name for them is Christmas Red Pickles....makes a nice relish tray with the red pickles and the green ones for Christmas or any time.

  • 1 gallon large cucumbers, peeled, seeded and cut into 1/2 X 2 inch sticks
  • 1 cup pickling lime
  • water
  • 1 cup vinegar
  • 1 ounce red food coloring
  • 1 tablespoon alum
  • 2 cups vinegar
  • 2 cups water
  • 8 cups sugar
  • 1 cup red hot candies
  • 6 sticks cinnamon
Methods/steps
  1. Peel, seed and cut the cucumbers into 1/2 X 2 inch sticks, so you have one gallon of sticks.
  2. Soak in 1 cup pickling lime mixed with water, enough to cover the sticks, let set 24 hours.
  3. Rinse well until all lime is removed and then soak in cold water for 3 hours.
  4. Mix 1 cup vinegar, 1 ounce red food coloring, 1 tablespoon alum plus water enough to cover cukes.
  5. Simmer for 1 1/2 hours (with cukes).
  6. Drain.
  7. While cukes simmer, make syrup of 2 cups vinegar, 2 cups water, 8 cupss sugar, 1 cup red hot candies and 6 cinnamon sticks.
  8. Heat until red hots melt.
  9. Pour over pickles and let stand overnight.
  10. Next morning, heat ONLY syrup (to boiling), and pour back on cukes.
  11. Next day, heat ONLY syrup again to boiling.
  12. Pack cukes in jars, pour syrup over and seal.
