  • 4 ounces bulk sausage
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped onion
  • 5 eggs
  • 1 can (4 ounce) sliced mushrooms, drained
  • 1/2 cup (2 ounces) shredded cheddar cheese
Methods/steps
  1. Coat a 6 cup muffin pan with nonstick spray.
  2. Preheat oven to 350 degrees.
  3. In a medium nonstick skillet over medium-high heat, cook the sausage, pepper and onion for 5 minutes or until sausage is browned.
  4. Spoon mixture into a bowl and cool slightly.
  5. Stir in eggs and mushrooms.
  6. Spoon mixture evenly into the prepared muffin pan.
  7. Sprinkle with cheese.
  8. Bake 20 minutes or until egg is set.
