  • 9 cups unpeeled, sliced cucumbers
  • 1 cup sliced onion
  • 1 cup sliced green pepper
  • 2 tablespoons salt
  • 1 tablespoon celery seed
  • 2 cups sugar
  • 1 cup white vinegar
Methods/steps
  1. Slice cucumbers, onion and green pepper.
  2. Let set 3 hours with 2 tablespoons salt and 1 tablespoon celery seed.
  3. Drain good.
  4. Mix 2 cups sugar with 1 cup white vinegar and pour over cukes, onion and green pepper.
  5. Keeps for a month or more in refrigerator.
Additional Tips
Looks like not enough juice, but the cukes shrink and make more juice. Recipe courtesy of Janet Renes, but she said she got it from Lorraine Van't Hof and I remember mom making some that tasted a lot like this recipe. It is good! Mom had them in a gallon jar in the fridge a lot!
