Raw Apple Cake with Caramel Frosting

  • Cake:
  • 2 cups sugar
  • 1 cup butter
  • 4 eggs, beaten
  • 3 cups flour
  • 1/4 teaspoon ground cloves
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 cup cold coffee
  • 3 cups raw apples, sliced or diced
  • 1 cup raisins
  • 1 cup walnuts
  • Frosting:
  • 1 1/2 cups brown augar
  • 3/4 cup butter
  • Then add:
  • 1/3 cup milk
  • Then add:
  • 3 cups powdered sugar
Methods/steps
  1. Beat the eggs.
  2. Add sugar and butter.
  3. Add dry ingredients alternately with coffee.
  4. Add apples, raisens and nuts.
  5. Bake at 350 degrees for 45-50 minutes.
  6. When cool, frost.
  7. For frosting;
  8. Boil 1 1/2 cups brown sugar and 3/4 cup butter for 2 minutes, stirring constantly.
  9. Add 1/3 cup milk and bring back to a boil.
  10. Remove from heat and add 3 cups powdered sugar.
  11. Beat well and spread on cooled cake.
Additional Tips

Fall is apple season and we had lots of apple growing up and this is one of our favorite recipes!
