Chicken and Wild Rice Soup

Description Good with that homemade chicken broth.

  • 2 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 3 medium carrots, peeled and finely chopped
  • 3 large celery stalks, finely chopped
  • 2 medium garlic cloves, minced
  • 12 cups (3 quarts) chicken broth
  • 1 1/2 cups wild rice blend
  • 1 pound boneless, skinless chicken breasts, medium dice
  • 1 pound boneless, skinless chicken thighs, medium dice
  • 1/4 cup coarsely chopped Italian parsley
  • Salt and pepper to taste (I usually just add pepper)
  1. Heat oil in a large pot over medium-high heat.
  2. When hot, add onion, carrots, celery and garlic.
  3. Cook, stirring occasionally, until onion is softened, about 10 minutes.
  4. Add broth and rice, and bring to a boil.
  5. Reduce heat to medium low and simmer, covered, until rice is tender but still has some firmness, about 25 to 30 minutes.
  6. Add chicken. If using fresh chicken, simmer until chicken is cooked through, about 10 minutes.
  7. Remove from heat, taste, add parsley and season if needed.
Additional Tips
I use Uncle Ben's wild rice (rice and seasoning packet). If not using seasoning packet, you may need to season with salt and pepper. I make the homemade chicken broth and use the chicken from that.
