Apple Popover Pancake

Description

Fluffy, custardy, rich but not-to-sweet, is what the recipe says. But we also like it for a dessert, it is good. We ate it with real whipped cream.

  • 6 eggs
  • 1 1/2 cups milk
  • 1 cup flour
  • 4 tablespoons white sugar
  • 2 teaspoons vanilla
  • 3 teaspoons cinnamon, divided
  • 1/2 cup butter (1 stick)
  • 2 large apples, peeled and sliced
  • 4 tablespoons brown sugar, divided
  • Vanilla ice cream or whipped cream, if desired
Methods/steps
  1. Preheat oven to 425 degrees.
  2. Have a 9X13 pan or glass dish ready.
  3. Combine eggs, milk, flour, sugar, vanilla and 1 teaspoon cinnamon in blender and mix well.
  4. When oven is warmed, place the stick of butter in pan and place in oven until butter has melted.
  5. Remove from oven and add apple slices, 2 teaspoons cinnamon and tablespoons brown sugar.
  6. Stir well and spread evenly over bottom of dish.
  7. Pour prepared batter over apples and sprinkle with additional 2 tablespoons brown sugar.
  8. Bake for 20 minutes.
  9. The pancake will be puffed up but will deflate quickly.
  10. Serve warm with vanilla ice cream or whipped cream.
Additional Tips

For 2 people (quite large servings) I made 1/3 of the recipe. This is what I used: 2 eggs, 1/2 cup milk, 1/3 cup flour, 1 tablespoon and 1 teaspoon white sugar, 3/4 teaspoon vanilla, 1 teaspoon cinnamon, divided, 2 tablespoons and 2 teaspoons butter, 1 small apple, 1 tablespoon and 1 teaspoon brown sugar, divided, vanilla ice cream or whipped cream. And baked it in a small casserole dish.
