Quinoa with Spinach and Cheese

A tasty, heart happy, super easy side dish!  Intensely flavorful!

  • 2 teaspoons olive oil
  • 1 cup diced onion
  • 1 minced garlic clove
  • 1 cup quinoa
  • 2 cups fat-free, low sodium chicken broth or vegetable broth
  • 2 cups chopped spinach or kale
  • 1/2 cup chopped fresh mushrooms
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • (Optional: 1/4 cup diced celery, or any other vegetable)
  1. In saucepan, heat olive oil over medium heat.
  2. Add onions and mushrooms(and celery, if using), cook for about 5 minutes until soft and translucent.
  3. Add garlic and quinoa. Cook for about one minute longer, stirring occasionally. Do not brown garlic.
  4. Add broth, bring to a boil.
  5. Reduce heat to low and simmer for about 12 minutes. The mixture will be brothy and the quinoa almost done.
  6. Stir in spinach and simmer for 2 more minutes or until the quinoa grains have turned transparent and appear to have 'popped'.
  7. Add cheese, season with salt and pepper.
  8. Stir well and serve hot.
Additional Tips

You can find quinoa (pronounced keen-wa) in the rice and pasta section of most grocery stores, or in the bulk section at your local natural food store. Don't be intimidated by the fancy name, quinoa is a grain, like rice or oats, packed with protein, fiber, iron and potassium, but gluten free so it can be eaten by people with wheat allergies.
