Oatmeal Pancakes

  • 1 1/4 cup rolled oats
  • 2 cups fat free milk
  • 1 egg
  • 1/2 cup whole wheat flour
  • 1/4 cup toasted wheat germ or ground flaxseed
  • 1 tablespoon baking powder
  • 2 teaspoons sugar or stevia
  • 2 teaspoons canola oil
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2-1 cup of sliced apples or mashed bananas, or any other fruit you\'d like to try
  1. Mix oats and milk in a bowl, let stand for 10 minutes.
  2. Stir in remaining ingredients until evenly blended and only small lumps remain.
  3. Heat skillet and coat with cooking spray.
  4. Pour batter by 1/4 cup onto skillet.
  5. Cook for 3-4 mintues, until bottom is brown and top starts to bubble.
  6. Flip and cook for 1-2 minutes longer.
Additional Tips

Serve warm with low-fat vanilla yogurt, banana slices and cinnamon sprinkled on top for a delicious heart healthy meal!
