French Onion Dip

A very tasty and healthier version of an old favorite!

about 3 cups (or 12 1/4 cup servings)
  • 1 tablespoon olive oil
  • 2 1/4 pounds yellow onions, peeled, halved vertically and sliced horizontally into 1/8\"-thick half-rounds
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1/2 cup reduced fat or fat free sour cream
  • 1/2 cup plain, fat-free Greek style yogurt
  • 2 teaspoons Italian parsley, chopped
  1. In a skillet or Dutch oven, heat oil over medium heat.
  2. Add onions and salt, simmer for 20-30 minutes, stirring occasionally.
  3. Once onions have become golden brown, let cool completely.
  4. Place onions in a food processor and pulse a few time until they are slightly chopped.
  5. Remove half of onions and place in a mixing bowl.
  6. With the remaining onions in the food processor, add the onion powder and process until completely pureed.
  7. Add the sour cream and yogurt and process until smooth.
  8. Add this mixture to the onions in the mixing bowl and stir well.
  9. Taste and adjust seasonings as desired.
  10. Chill completely.
  11. Transfer to a serving bowl and garnish with Italian parsley.
Additional Tips

Serve with jicama slices for a heart happy snack!
