  • 3 carrots, peeled and cut into thin strips
  • 2 medium zucchini or 1 large zucchini, cut into thin strips
  • 2 yellow squash, cut into thin strips
  • 1 onion, thinly sliced
  • 1 yellow bell pepper, cut into thin strips
  • 1 red bell pepper, cut into thin strips
  • 1/4 cup olive oil
  • Kosher salt and fresh ground pepper
  • 1 tablespoon dried Italian herbs or herbes de Provence
  • 1 pound bowtie pasta
  • 15 cherry tomatoes, halved
  • 1/2 cup grated Parmesan
Methods/steps
  1. Cook pasta until tender, but still firm to the bite (al dente) about 8 minutes.
  2. Drain, reserving 1 cup of the liquid.
  3. Heat a large skillet, add olive oil.
  4. Add all the rest of the ingredients, except for the tomatoes and Parmasan.
  5. Cover and stimmer. Stir the ingredients occasionally.
  6. Add only enough reserved liquid to moisten.
  7. When the two are ready, mix and serve.
  8. Top with tomatoes and sprinkle with Parmasan.
Additional Tips
I use whatever veggies that I have ready in the garden, so tonight we had onion, sugar peas, broccoli, and carrots. I also used left over spaghetti instead of the bowtie pasta.
