Mini Quiche Cups

Description

Little no-crust quiche cups makes for an easy breakfast.

12 cups
  • 1 package of frozen chopped spinach
  • 3 eggs
  • 3/4 cup low-fat shredded cheddar
  • 1/2 cup diced vegetables (onions, peppers, mushrooms, etc.)
Methods/steps
  1. Thaw spinach in microwave, about 2 1/2 minutes.
  2. Line 12 cup muffin pan with foil baking cups
  3. Spray cups with cooking spray.
  4. Combine eggs, cheese and vegetables in a bowl.
  5. Divide evenly among the muffin cups.
  6. Bake at 350 for 20 or until a knife inserted in the center comes out clean.
Additional Tips

Can be frozen and reheated in the microwave for a quick, healthy breakfast. Any combination of low-fat cheese and vegetables may be used.
