  • 4 skinless, boneless chicken breast
  • 2 tablespoons oil
  • Dry Mixture:
  • 1/2 cups bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon Italian Seasoning, or mix of basil, oregano, etc.
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon of salt
  • Egg Mixture:
  • 1 egg, beaten
  • 1/4 cup milk
  • 1 tablespoon oil
  • 1 tablespoon water
  • Your favorite Homemade Pasta Sauce
  • Or:
  • 1 tablespoon olive oil
  • 1 jar pasta sauce, no sugar added
  • 4-6 mushrooms, sliced
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 1 package favorite whole grain pasta
Methods/steps
  1. Heat pot of water for pasta.
  2. In a saucepan, saute onions, garlic and mushrooms in olive oil.
  3. Add and heat jar of pasta sauce in saucepan.
  4. Heat the 2 tablespoons oil in a separate pan over low-medium heat.
  5. Add pasta to boiling water, cooking and draining according to package instructions.
  6. Mix all dry ingredients together in a bowl.
  7. Mix all liquid ingredients together in a different bowl.
  8. Place chicken in the egg mixture bowl.
  9. Remove chicken from liquid mixture and dip into breadcrumb mixture, coating evenly.
  10. Carefully place chicken into hot oil and cook until lightly browned, turning as necessary until they are fully cooked.
  11. When finished, place pasta in bowl, add chicken and top with sauce.
Additional Tips

Try various combinations of seasonings to fit your taste. If there seems to be to much breadcrumb mixture, prior to dipping chicken in, separate a couple tablespoons out onto a plate. If you have too much, you can always freeze if for later.
