Stuffed Peppers

Description A tasty side dish. With the hot weather, we have grilled and microwaved these green peppers. On the grill is about the same method as the oven. For the microwave, after you brown the hamburger, add the remaining ingredients, except for the cheese, let set covered for 5 minutes, then microwave covered for 6 to 8 minutes, until peppers are tender. Then let set 5 minutes and enjoy!

  • 2 medium peppers
  • 1/2 pound ground beef
  • 1/2 cup chopped and peeled fresh tomatoes (if using canned,drain the tomatoes)
  • 1/4 cup instant uncooked rice
  • 1 tablespoon chopped onion
  • 1/2 teaspoon worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg,beaten
  • 3 tablespoons shredded cheddar cheese
Methods/steps
  1. Cut tops off peppers and discard; remove seeds.
  2. Brown ground beef and onion.
  3. Add the rest of the ingredients, except for the cheese.
  4. Stuff the peppers, place in an greased glass pan. (I like a little water in the bottom of the pan also.)
  5. Bake at 350 degrees for 45-50 minutes.
  6. Sprinkle with cheese; return to oven for 5 minutes or until cheese is melted.
Additional Tips
If large, I usually cut the peppers in half and stuff them. It works nice to bake them in a pan that is about perfect in size, so you don't spill the filling.
