  • Vegetable oil spray
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 medium very ripe bananas, mashed ( about 1 1/2 cups)
  • Whites of 4 large eggs
  • 1/2 cup wheat germ
  • 1/4 cup fat- free or low- fat buttermilk
  • 1/4 cup unsweetened applesauce
  • 1 tablespoon acceptable vegetable oil
  • 1 teaspoon rum extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon imitation butter flavoring
  • 1/4 cup firmly packed light brown sugar
Methods/steps
  1. Preheat the oven to 350 degrees.
  2. Lightly spray an 8 1/2 x 4 1/2 x 2 1/2 or 3 mini loaf pans with vegetable oil spray.
  3. In a large bowl, sift together the flour, sugar, baking powder, baking soda and salt.
  4. Add the remaining ingredients except for the brown sugar.
  5. Stir until just combined. Don\'t over mix.
  6. Pour into the loaf pans.
  7. Sprinkle the brown sugar over the batter.
  8. Bake for 1 hour, or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for at least 10 minutes.
  10. Turn out onto a cooling rack.
