Balsamic Chicken

  • 6 boneless, skinless chicken breast halves
  • 1 1/2 teaspoons fresh rosemary leaves, minced, or 1/2 teaspoon dried
  • 2 garlic cloves, minced
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 4-6 tablespoons white wine (optional)
  • 1/4 cup balsamic vinegar
Methods/steps
  1. Combine rosemary, garlic, salt and pepper in a bowl.
  2. In a large bowl, drizzle oil over chicken, rub with spice mixture.
  3. Cover and refrigerate overnight.
  4. Preheat oven to 450 degrees.
  5. Spray roasting pan or iron skillet with cooking spray.
  6. Place chicken in pan and bake for 10 minutes.
  7. Turn chicken over bake for another 10 minutes or until cooked through. If drippings begin to stick to pan, stir in wine or 3-4 tablespoons water.
  8. Drizzle vinegar over chicken, when done.
  9. Transfer to plate and drizzle liquid in pan over chicken.
Additional Tips

Serve with long grain or brown rice and roasted broccoli for a healthy dinner.
