Orzo with Parmesan and Basil

  • 3 Tablespoons canola oil
  • 1 1/2 cups orzo pasta
  • 3 cups chicken or vegetable stock
  • 6 Tablespoons fresh basil (or 2 teaspoons of dried)
  • 1/2 cup freshly grated parmesan
  • salt and pepper to taste, optional
Methods/steps
  1. Heat oil over medium high heat.
  2. Add the orzo and saute for several minutes, until the orzo starts to become golden brown.
  3. Add the broth, cover and simmer for about 20 minutes, or until the orzo has absorbed all of the broth.
  4. Remove from heat, add the basil and parmesan.
Additional Tips
This is so good! I did not add the salt and pepper and I used a lttle less oil.
