Asparagus Frittata for Two

Description OK, so I found two recipes close and combined them and we really like it. So make it like you like it!

  • 6 ounces of asparagus or about 8 spears, cut into 1/2 to 3 inch pieces (however you like)
  • 4 eggs
  • 1 Tablespoon water
  • 1/4 to 12 cup grated sharp cheddar cheese
  • 2 Tablespoons parmesan cheese, grated
  • 2 teaspoons olive oil
  • 1 small onion, minced
  • fresh ground pepper to taste
  • Kosher salt to taste
Methods/steps
  1. In a measuring cup (4 cup or larger), whisk eggs with water. Set aside.
  2. Drizzle olive oil in skillet.
  3. Add onion and asparagus, sauté 2-3 minutes, until the onions are slightly browned and asparagus is starting to soften.
  4. Pour egg mixture into the pan, and turn the heat to simmer.
  5. Cover the frying pan and cook the frittata gently for 4-5 minutes or until eggs are nearly set.
  6. Sprinkle with parmesan cheese.
  7. Sprinkle on cheddar cheese.
  8. Cover and let cheese melt.
  9. Slide it onto the plate and enjoy!
Additional Tips
One recipe said to put it in a 450 degrees oven for about 7 minutes and the other one said to broil to get the cheese bubbly or just simmer on top of the stove until set. One recipe mixed the cheese with the egg mixture, so experiment and see how you like it. I did it all on top of the stove and it was good. Says it's good, hot, room temperature and cold! We ate it hot!
