Peach Berry Crisp

Description Or make it apple crisp and change the spice to cinnamon. Half the the sugar and 8 times less butter than a lot of recipes, but still very tasty.

Bread Pudding / Cobblers
  • 4 peaches, peeled and sliced
  • 1 cup blueberries
  • 1 teaspoon lemon juice
  • 2 tablespoons sugar
  • 1 teaspoon ground ginger or cinnamon
  • 2 tablespoons walnuts, finely chopped
  • 1/4 cup quick oats
  • 1/4 cup flour
  • 1/2 cup light brown sugar, lightly packed
  • 1 tablespoon butter
  1. Arrange fruit in 8-inch baking pan.
  2. Sprinkle with lemon juice, sugar and ginger.
  3. In bowl, measure dry ingredients and cut in butter until crumbly.
  4. Spread over fruit in baking dish, lifting fruit gently so crumbs coat evenly.
  5. Bake at 375 degrees for about 30 minutes or until fruit bubbles and topping is browned .
  6. Cool slightly.
Additional Tips
If you have some people in your family that think they don't like oatmeal, just run it in the food processer a few seconds before adding it to the rest of the ingredients.
