Broccoli Cheese Soup

  • Cooking spray
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1cup chopped celery
  • 2 garlic gloves, minced
  • 3 cups fat-free less sodium chicken broth
  • 1 (16 ounce) package broccoli florets
  • 2 1/2 cups reduced fat milk
  • 1/3 cup flour
  • 1/4 teaspoon pepper
  • 8 ounces cheese, cubed (I use American)
  • Ham
Methods/steps
  1. Heat a large saucepan coated with cooking spray over medium-high heat.
  2. Add onion, celery, carrots and garlic, sauté 3 minutes or until tender.
  3. Add broth, ham and broccoli.
  4. Bring broccoli mixture to a boil over medium-high heat.
  5. Reduce heat to medium; cook 10 minutes.
  6. Combine milk and flour, stirring with a whisk until well blended.
  7. Add milk mixture to broccoli mixture.
  8. Cook 5 minutes or until slightly thick, stirring constantly.
  9. Stir in pepper.
  10. Remove from heat, add cheese, stirring until cheese melts.
  11. Enjoy!

Ready in about 30 minutes.
