  • 2 chicken breasts, cut in strips
  • 2 Tablespoons olive oil
  • 1 Tablespoon finely chopped garlic
  • 1 can mushrooms, drained
  • 1 onion, sliced
  • 1 medium red bell pepper, cut in strips
  • 1 medium green bell pepper, cut in strips
  • 2 jalapeno peppers, chopped 1 chili pepper, don't cut it up
  • Tortilla shells
  • lettuce tomato cheese salsa sour cream chopped fresh cilantro, if desired
Methods/steps
  1. Brown chicken in oil, add garlic. (Can marinade the chicken first or season as desired.) Set aside. Saute mushrooms and onion. Add peppers. Add chicken and heat through.
  2. Warm tortillo shells in microwave between paper towels.
  3. Fill shells with fajita mixture and top with lettuce, tomato, cheese, salsa and sour cream.
  4. Roll up and eat!
Additional Tips
Don't cut up the chili pepper, unless you want your fajiita really hot.Can use about 2 pounds of fresh mushrooms.If grilling the veggies, place mushrooms, bell peppers and onion in batches on grill. Grill uncovered 2 to 3 inches from medium heat 5 to 8 minutes, stirring or turning occasionally, until mushrooms are cooked through.
