Cheesy Hash Brown Casserole

  • 1 bag shredded hash brown potatoes
  • 2 cups shredded cheddar cheese + 1 cup to sprinkle on top ( I prefer sharp cheddar but mild is good too)
  • 1 can cream of mushroom soup
  • 1 pint sour cream
  • 1/4 cup butter, melted + 1/2 cup on top
  • 2/3 cup minced onion + a few shakes onion powder
  • 1/2 teaspoon salt
  • 1/4-1\2 teaspoon pepper
  • Cornflakes
  1. Preheat oven to 350 degrees and grease a 9x13 pan or two 8x8 pans
  2. Mix all ingredients together except additional butter, additional shredded cheddar and cornflakes.
  3. Pour mixture into pan, then add shredded cheese on top followed by crouched cornflakes.
  4. Top with evenly spaced squares of butter.
  5. If freezing, stop here and cover. (The cornflakes freeze great and are crispy after baking.)
  6. Bake for 45 minutes to 1 hour, usually an 8x8 is done in 45 minutes and a 9x13 takes the full hour.
