Fruit Pizza

  • Homemade Fruit Pizza Crust:
  • 1 1/3 cups flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1/2 cup unsalted butter, softened but still cool
  • 1 large egg
  • 1 teaspoon vanilla
  • OR:
  • 1 (16.5 ounce) package refrigerated sugar coolie dough
  • Ingredients for topping:
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla
  • 4 cups assorted fresh fruit (kiwi, strawberries, red raspberries, blueberries, diced pineapple and canned mandarin oranges)
  • 1/4 cup apricot preserves, pressed through a sieve to remove lumps
  • ! tablespoon water
  1. For the homemade crust:
  2. Preheat oven to 350 degrees.
  3. Ina mixing bowl whisk together flour, baking powder, baking soda adn salt for 20 seconds.
  4. In the mixer bowl, cream together sugar and butter.
  5. Mix in egg and vanilla., then slowly blend in dry ingredients.
  6. Butter a rimmed 12 inch pizza pan, line with parchment paper and butter parchment pan.
  7. Spray hands with non-stick cooling spray and spread cookie dough into an even layer in bottom of prepared pizza pan.
  8. Bake 12-14 minutes until edges are golden.
  9. Cool completely on a wire rack.
  10. Instructions for topping:
  11. in a mixing bowl, using a mixer, whip cream cheese, sugar and vanilla until light and fluffy.
  12. Spread evenly over cookie crust.
  13. Top with fruit.
  14. In a small bowl whisk together the preserves and water.
  15. Brush mixture over fruit, this gives it a shine.
  16. Refrigerate 2 hours, then cut into slices.
