Coconut Macaroons

  • 1 (14 ounce) can eagle brand sweetened condensed milk
  • 1 large egg white, beaten
  • 1 (14 ounce) package (5 1/3 cups) flaked coconut
  • 2 teaspoons vanilla
  • 1/2 teaspoon almond extract
Methods/steps
  1. Heat oven to 325 degrees.
  2. Line baking sheet with foil. Spray with flour no-stick cooking spray.
  3. Combine sweetened condensed milk, coconut, vanilla and almond extract in large bowl; mix well.
  4. Fold in beaten egg white.
  5. Drop by rounded teaspoonfuls onto prepared baking sheet.
  6. Bake 15 to 17 minutes or until lightly browned around edges.
  7. Immediately remove from baking sheets to wire rack. Macaroons will stick if allowed to cool on baking sheet.
Additional Tips
Variation chocolate egg: prepare and bake as above. Press solid chocolate candy piece into center of each macaroon immediately after baking.
