Chicken-Broccoli Stir Fry

1 pound chicken breast strips

2 Tablespoons oil

4 cups vegetables (broccoli, pepper strips, sliced water chestnuts, carrots, onion, cauliflower, or vegetables of your choice)

1 1/2 cups chicken broth

3 Tablespoons soy sauce

2 Tablespoons cornstarch

2 teaspoons brown sugar

1 teaspoon garlic powder

3/4 tespoon ground ginger

1 1/2 cups original minute rice

 

Methods/steps

1. Stir fry chcken in hot oil in large skillet until brown.

 2. Add veggies, stir fry until tender and crisp.

3.  Mix broth, soy sauce, cornstarch, sugar, garlic powder and ginger.  Add to skillet.

4. Bring to a boil, boil one minute.

5. Meanwhile, prepare rice as directed on package.

6.  Serve chicken and veggies over rice.
